About the chef
Born and raised in Johannesburg, Chef JC is a seasoned sushi artisan whose journey began with a deep passion for traditional Japanese cuisine. Having trained and worked alongside master sushi chefs from both Japan and China, he honed his skills in the art of authentic sushi-making, mastering techniques that emphasize tradition, precision, and flavor.
Chef jC eventually opened his own successful sushi establishments, gaining a reputation for delivering a sushi experience rooted in authenticity and quality. Now based in Cape Town and Johannesburg, he offers consulting services to both small and large businesses, helping them elevate their sushi offerings.
His expertise includes crafting basic seasonal and authentic sushi, as well as rare traditional styles seldom found in Cape Town's sushi scene. Whether curating a personalized sushi experience for patrons at home or enhancing the standards of sushi establishments, Chef JC is dedicated to bringing the art and tradition of sushi to life in South Africa.

6pc Salmon Tataki
Pan-seared salmon covered in togarashi spice covered in nori dust topped spice salsa and laid down on a bed or lime with citrus ponzu
Tokyo Bowl
Fermented sushi rice topped with 3pc tuna tataki drizzled dashed with truffle mayo unagi sauce micro herbs and chives balsamic pearls and ningchi chilli
6pc Loaded Futomaki
Salmon, Prawn Tuna, Whitefish assorted veg topped with Truffle mayo edible flowers radish, and chives
4pc No rice roll
Nori sheet filled with salmon and tuna topped with avo salmon roe and chives radish and drizzled with unagi sauce
4pc Sushi bites
Crispy rice topped with salmon tartare and tuna tartrate balsamic pearls radish and a thread of chives.

Salmon tartare topped on cube rice wrapped in nori topped with salmon roe and a thread of chives

Salmon, Tuna, White Fish, Prawn topped with salsa assorted topping and ponzu sauce
1 x Traditional hand roll
5pc Selected Nigiri
Salmon, Tuna, Prawn, White Fish , Swordfish with various toppings
8pc Wagyu and Prawn Deluxe deep
Deep fried prawn roll covered with Wagyu wrapped in nori topped with truffle mayo unagi sauce and chives

BUFFET SUSHI BAR

A selection of basic and signature sushi.
Please Note:
1. To guarantee the best service and experience, bookings should be made at least 48h before the desired date to enable your chef to plan everything accordingly. There will be a 10% surcharge fee for bookings made in less than 48 hours.
2. The minimum number of people required under each menu is based on adult guests and excludes children. Children under 12 will be charged half of the adult menu price. Main course & dessert.
3. A 30% surcharge will be added for bookings on public holidays (1 Jan, 2 Jan, 21 Mar, 7 Apr, 10 Apr, 27 Apr, 1 May, 16 Jun, 9 Aug, 24 Sep, 25 Sep, 25 Dec, & 26 Dec).
